Oatmeal a la Lucas
My son loves blueberries. Like LOVES them. I can remember slicing them in quarters when he was just 10 months old, and watching him gobble them up as fast as they landed on his high chair tray. We put them in everything now – yogurt, pancakes, muffins, smoothies, oatmeal. We puree them and make sauce for ice cream or yogurt, even popsicles! In our house, breakfast just isn’t breakfast unless there are blueberries. Today I’m sharing our favorite, and super quick blueberry oatmeal recipe. Both my boys gobble this stuff up just as fast as those sliced berries nearly four years ago.
This breakfast is incredibly easy, on the table in less than ten minutes, and packed full of protein, fiber, and healthy fats. I make it in the microwave to save time on busy mornings. This stuff is far better than opening up a packet of instant oatmeal. You can buy your oats in bulk (I use bob’s red mill rolled oats) at almost any grocery store or natural foods market, and add in your favorite healthy ingredients. Here is our favorite combination!
Better than Quaker’s 10 Minute Microwave Oatmeal (aka Oatmeal a la Lucas)
1/2 cup of gluten free rolled oats
1 cup of coconut milk – or your milk of choice
1/3 cup (or more) frozen berries
1-2 Tbsp Almond Meal
1-2 Tbsp Chia Seeds
Maple Syrup to taste
Combine the oats and milk in a microwave safe bowl, and microwave for 4-5 minutes or until oats are soft. There should still be remaining liquid in the bowl -if not add a couple tablespoons. Add chia seeds and almond meal and stir to combine – this should absorb the remaining liquid. Add maple syrup and frozen fruit, which will cool down the oatmeal to the perfect temperature for little tongues. 😉 Serve and enjoy!

Brian’s obsessed with blueberries and we always have a giant costco bag of them in the freezer. My favorite thing to do with them lately is use them as ice cubes in carbonated water. Yum
