NO MORE Pop Tarts, and an Easy Lentil Salad
I was perfectly sugar free for nearly a month and then…. Pop Tarts happened. Gluten free pop tarts, or toaster pastries, whatever you want to call them. I hadn’t had one in 13 years so you can understand my excitement when I saw them sitting on the shelf in my local Albertsons. I brought them home and devoured them only to find that they weren’t even that good, kind of gross actually. But once my brain got the effects of that sugar I was a hopeless case and I kept eating them. I lost all control and I need to get myself together again. My lunches need to look like this photo above… I’m hoping this will motivate me to get back on track. 🙂
EASY Lentil Salad
A couple hand fulls of Baby Romain lettuce
About a half cup cooked lentils
1/2 avocado
Olive Oil, lemon juice, and salt – or your favorite dressing.
Toss ingredients and enjoy!

Oh I know this feeling… finding something yummy and just eating it… and more of it… You will get back there… a good trip to the grocery store for some good stuff always helps!

So funny because a few weeks ago, I was starving during class. I went out to the vending machine and saw that they had pop tarts. I was thinking I hadn’t had one since I was probably 12, so I bought a pack. I took one bite and thought it was gross….but then devoured the entire thing and wanted more the next day! What the heck?!

Thx for sharing, tried this simple recipe and loved it! The nice thing is you can experiment with adding all sorts of yummy vegetable.
